I am a 3rd generation, both grandparents from my Mother And Father came
from Poland to NY. I was raised in NY but never had a good opportunity to
learn polish. I am now living in Kentucky (not many Poles here) and would
like to learn the language. Any suggestion? The schools don't offer it
here like they do in NY.

I'd suggest you search for groups where real Polish is used. Here, as you
see, people haggle over Judaism in "Polish" using Roman alphabet. Unless you
already know Polish language, this kind of Polish would make no sense to
you.
Search for groups originating from Poland, and where people are not lazy to
use real (with tails and accent marks) Polish alphabet.
