primarily determine their final grades?
Are they given exams as frequently as in high school?

Answer:
Generally you should expect to take many fewer exams, each of which counts
much more than in college. It's not uncommon (at least in social sciences
and humanities) to have a course with, say, 2 midterms and a final or even
just a single midterm and a final.
As to what determines grades, this will vary from discipline to discipline.
In English it'll likely be a lot of weight on papers and the rest on one or
two tests. In a math class, on 2 - 4 tests and several problem sets.
In my experience they vary from discipline to discipline and not
college to college -- English courses will look more or less the
same at most schools, as will poli-sci courses, as will chem
courses, but English and poli-sci and chem courses are likely
to be very different at the same school.
